feeling fruity couscous: dairy free

This is a really easy, quick lunch or side dish. I'm vegetarian, so tend to eat it with falafel & pitta. My family are full on meat heads, so I'll often whip up beef koftas for them (below).

This dish is vegan, but contains gluten.

For the meat heads...served with koftas.

Ingredients: 500g couscous 500ml boiling water

10g marigold stock

zest & juice of 1 lemon

4 tbsp olive oil

40g raisins

35g chopped apricots

1 chopped pepper

100g corn kernels

2 finely chopped spring onions

2 tsp turmeric

1 tsp cinnamon

1 tbsp ras el hanout

chopped thyme, mint & coriander

plenty of freshly ground pepper & salt

Method

Place couscous into a bowl with stock, turmeric, cinnamon, ras el hanout. Pour boiling water over. Stand for five minutes. Stir through olive oil and other ingredients. Season to taste.
