post holiday avocado pasta: vegan; can be made with GF pasta

My husband's always the same. Post holiday, he's a health nut. Here's a great recipe, full of goodness, high protein AND filling.

For gluten free, simply sub in the pasta for your favourite gluten free brand. This recipe serves 2.

Simple healthy ingredients

Ingredients

225g dried spaghetti, or other pasta of your choice, cooked as per pack instructions

2 cloves garlic

2 tbsps lemon juice

40ml good olive oil

200g cherry tomatoes halved

100g canned sweetcorn

super healthy supper

2 ripe avocados

handful of pine nuts toasted

Method

Easy peasy. While the pasta is cooking, bung all the ingredients other than the sweetcorn & tomatoes, into a food processor & blitz until smooth. Season.

Drain the pasta, combine with the avocado, tomatoes & sweetcorn. Scatter over the toasted pine nuts.
