the rustic tomato sauce con; gluten free

Today my crazy husband is doing an 170 mile bike ride. This is nothing unusual. Ask him why he cycles and he'll reply 'because I like food'. After an epic ride, he'll need hearty fodder; for about 4 days. It's a great excuse for me to whip up his fave budget lasagne (that tastes anything but 'budget').
My Lasagne base starts with this delicious 'rustic' tomato sauce, (I use in pretty much every Italian dish). I sometimes add stock to create a soup which tastes like I've painfully slow roast mountains of fresh juicy tomatoes...shhhh....
Ingredients
1 can plum tomatoes (go on treat yourself to organic)
50g unsalted butter
1 onion quartered
1 organic carrot, topped tailed & chopped into 1 inch chunks
2 cloves whole garlic, simply de-skinned
lots of freshly ground black pepper
pinch salt
1/2 tsp sugar
Method
I'm almost too embarrassed to write this...
Put all the ingredients in a pan. Put a lid on the pan. Bring to the boil, reduce the heat and simmer on the lowest heat possible for at least one hour.
Blitz with a stick blender.
Voila....
