protein enriched choc & coconut flapjack; vegan

I'm always looking for ways to get more protein into my diet. I like to add The Raw Chocolate Company Organic Hemp Protein Powder into sweet treats, but I've found it can make things a weird, mucky colour. For this reason (and this reason only......) along with the powder, I HAVE to add chocolate. Here's my recipe for vegan flapjack. It contains coconut oil, chia seeds, hemp and banana, so with eyes shut, it can almost pass as a bit healthy....

This recipe makes as many as you like. Cut them like me...you'll get 12 slices. Cut like a 'normal' person, you'll get 24.

Recipe tip:

Cook the flapjack and leave it in the oven for ten minutes, after you've turned it off. Cut into slices whilst still in the tin, but don't remove until absolutely cold (to prevent the flapjack from falling to bits).

Ingredients:

50g organic coconut oil melted in the microwave with 65g dairy free margarine, 150g light brown sugar & 50g golden syrup.

1 small banana mashed

1 tablespoon chia seeds

25g organic hemp protein powder

25g cocoa powder

275g organic porridge oats

100g coconut

100g raisins, or any other dried fruit you like

Method:

Preheat the oven to 160 degrees.

Mix all the ingredients into the melted fats & sugars.

Press into a lined, deep baking tin ensuring the edges are tidy, to prevent burning.

Cook for 30-40 mins, until firm to the touch and slightly browned.

Turn off the oven and rest for ten mins. Cut into slices and leave to cool before packing into an airtight container.
