Over the past few weeks, my family seem to have developed a bit of an obsession with Nutella. I've never been a massive fan, but oh my...these buns (pretending to be bread) are the bees. I've combined a few recipes to create the final result; a soft squidgy, Chelsea style chocolate bread bun, topped with sugared, buttery, crunchy walnuts and a smooth chocolate middle....
Ingredients:
For the dough:
1tsp sugar, combined with 1x 7g sachet of quick yeast & 120ml warm water. Left for 10 mins until frothy.
120ml warmed milk mixed with 4 tbsp oil, 2 whisked eggs, 1tsp salt & 1tsp vanilla extract
600g strong white bread flour
For the filling:
400g Nutella
For the topping:
165g brown sugar combined with 75g melted butter
100g chopped walnuts
Method
In a large bowl, combine the yeast mixture with the milk, oil, eggs, salt & vanilla. Tip in the flour & mix well. Knead on a floured surface for ten minutes, place in an oiled bowl. Cover with a damp t-towel and leave to prove until doubled in size (approx. 1 hour).
Once proved, roll the dough into a large even rectangle. Slightly warm the Nutella, until soft & spread over.
Now, pre heat the oven to 180 degrees.
Take one of the longer sides of the dough rectangle & roll it tightly & evenly to the other; to create a large sausage. With a sharp bread knife, cut into 12 even slices.
Pour the melted butter & brown sugar into a deep baking tray & scatter over the walnuts.
Place the sliced dough on top and cook for 30 mins.
Remove from the oven, allow to cool for a few minutes, then carefully place the buns top side down on a large serving platter. Spread over the brown sugar & walnuts, scraped from the tin.
Allow the sugar to cool slightly, before devouring.
